The trick with harvesting peas is to get them when they are the very sweetest. If you pick them too soon, they won't be very sweet but they will be tender. If you pick them too late, they will be tough and mealy and they certainly won't be sweet. So the best way to know when to harvest peas is to taste-test them every day and see when they are the sweetest.
In Utah, peas can be planted in mid-March (St. Patrick's Day) until the end of April. If you plant some every week, during that time, you will be harvesting peas from mid-June through early July.
Peas can be planted again in mid-August for a fall crop.
